I’ve been observing lately that the people are making more effort to be healthy and happy than in the past.
In order to adapt to difficult living conditions, people pay more attention to positive thinking, a better diet and maintaining daily sports activities. By the way, over disciplined diet may overwhelm us, that’s why I think it’s okay to enjoy the food we like to have once in a while. Approaching the holidays is the best time to indulge ourselves with comfort food! Happy Days to everyone! |

Cooking with free spirit

You may find many cook books sold in the bookstores which have hundreds of recipes that suits your taste, life style or diet, or countless recipes on the internet. Our purpose is to cook (or bake) a good food that we enjoy along with its nutritious value.
When we pick a recipe from one of those sources, we have a tendency to follow the recipe precisely what the recipe suggests, most of the time it turns out well, but if the result is not what we expected, we think that the recipe was not successful. Other times we get bored using same method.
However, cooking is an art, like painting, writing poetry, singing etc. It’s like painting created on the canvas by an artist using his brush with colors from his palette or poet by putting his words together in a harmonious way to express his feelings.
It is entirely up to your creativity and desire using kitchen utensils, like the mastery of a painter’s brush or the words of poet, to turn the meat, fish, vegetables, legumes, dairy products with the help of spices, herbs into a delicious meal, baked goods or snacks.
My kind suggestion would be using your imagination play around with spices, herbs, changing or adding some ingredient based on personal preferences as well as following the recipe essentials. With your creativity you may end up with your own recipe possibly better than the original formula.

my MEDICINE CABINET APRIL 2021
from VITAMIN BOTTLES TO THE FRESH MARKET
Hello April 2021! Nature is waking up for another spring though Covid-19 Surge is still continuing! However, vaccination rush is also ongoing full speed at this time. We are cautiously optimistic that the life is finally returning back to normal.
During the last one year, I was more intense about consuming vitamins and minerals. Especially Zinc, Vitamin C, Vitamin B-Complex, Magnesium, D3 to keep my immune system stronger in case of Covid-19 infection, in addition to being careful with my fresh food diet which contains these minerals and vitamins.
Recently I increased and adjusted our family diet to include more food sources for essential vitamins and minerals so that I can reduce the pill forms. Here are some samples of my fresh food medicine cabinet.
Our body needs a variety of nutrition which is present in every color of the rainbow!
More importantly, we must appreciate and enjoy any type of healthy food that we can provide for our family to get the best health benefits!
For Vitamin D source please stay out doors at least 15-20 minutes each day if possible because SUN LIGHT is the best Vitamin D source. Enjoy breathing fresh air for a few minutes, aware of your breathing and feel the moment!

CHERISHING OUR TIMES TOGETHER! February 2021
THERE IS ALWAYS A REASON TO SMILE AS LONG AS WE CAN BREATHE!
Today, it is almost a year since the Covid-19 has been declared as a Pandemic and changed our lives dramatically. Although there are lots of progresses being made since then, in terms of people are being more aware of how to avoid the virus and number of vaccines being developed in multiple countries, we are still struggling to end the pandemic, not to mention the new mutants of the virus showing up in different places around the world.
This unprecedented times effected people in many ways. From kids being locked in and educated remotely, elderlies being locked in could not enjoy their most valuable time of their life, working adults and especially health care workers had to work behind the mask all day long sometime 24/7 since last January, most hurting is we all miss so much hugging our loved ones. Indeed, we still don’t know when we can be free of this virus.
However, I read a very loving story from a young mother saying that how she cherishes this time sharing her time with her son. After an extremely busy life that we all accustomed, how she loves having breakfast lunch and dinner with her core family all in the same day together within last one year. Her joy of living the moment warmed my heart deeply.
And I wish every body feel the same way because that busy life will come back but this exceptionally treasured times with their parents will stay in children’s heart forever.
Enjoy the board games in the evenings, enjoy relearning math and science with them, enjoy cooking with your children, enjoy delicious waffles they make, enjoy chocolate covered bananas, enjoy swimming or making a snowman with them.
