Caramelized Pan fried okras
Ingredients:
1 Tbsp. olive oil 1/2 C water 1 Lb. fresh okra 1 Tbsp. pine nuts 1 Tbsp. sugar 1 lemon (juice) Salt, pepper 1/2 Tsp. paprika Making: Cut the tip of the okras very carefully Soak in lemon juice for 30 minutes. Drain the lemon juice and save it. Heat the oil in a flat pan. Add the okras add the water and cook the okras on medium heat until the water evaporates. Fry the okra very lightly. Add the pine nuts and keep pan frying until the okras get lightly brown. Add salt and paprika Add sugar, let the sugar melt and caramelized, stirring. Take all the okras into the serving dish. Add the lemon into the pan and let the sauce bubble for couple of minutes. Drizzle on the okras. Serve warm as a side dish .. 4/1/2021 Back to Soups and Salads page |
