Spaghetti Squash
Ingredients:
1 spaghetti squash 1 Tbsp. melted butter 2 tbsp. olive oil 1 onion 2 cloves of garlic (minced) 1 1/2 C pureed tomatoes 1/2 C canned mushroom 1/2 C Kalamata olives (sliced) 1Tbsp. tomato paste 1 Tbsp. dried thyme 1Tbsp. fresh basil 3/4 C (Romano, Parmesan, Asiago) cheese mix Making: Set the oven 360F (182 C) Halve the squash and scoop out the seed Brush inside generously with melted Place on a greased cookie sheet (I use cooking paper) Bake for 30 Minutes. (Do not let the squash brown) You should be able to scoop the squash out and it should be able to separate like a spaghetti) In a shallow large pan heat the oil and add the onions, sauté until onion gets translucent. Add garlic, tomato paste, tomato puree and continue sauteing on medium heat. Once mixture becomes like a spaghetti sauce, Add mushrooms, olives, thyme and basil. Mix well. Add salt and freshly grounded pepper corn Add squash and mix all gently with wooden forks.
