almond paste filled cocoa cookies
When I was a child, my father used buy almond paste candies for special occasions. We used loved them so much these little white conic shape candies which we use to sneak in before the guest comes.
Also, I used to bake the circle shape cocoa cookies that I found the recipe from the newspaper actually. I don’t have that recipe anymore but I still love crisp cocoa cookies. Basic sugar cookie recipes made up – butter- sugar and flour, right? Just add the cocoa powder in and make soft cookie dough. Roll it out and make round cookies. When you put almond paste in the middle you need to cover with another piece of dough. So that is how I make my almond paste filled cocoa cookies. Ingredients: 1 Cup unsalted butter (softened in room temperature) 1 Cup sugar (I used brown sugar) 1 egg 2 1/2 C unbleached flour 7 Tbsp. Dutch pressed cocoa 14 Tbsp. Almond paste (cut equally in 40 cubic shape pieces.) **Almond paste sold in bakery departments like a butter shape packages. Melted dark chocolate for decoration. Making: Bring butter and sugar in a bowl and beat it until the mixture becomes creamy. Add egg and beat well again. Add flour and cocoa powder Mix it and make a soft dough. Roll it out 1/4inch thick sheet. Cut the dough with cookie cutter shapes. Place the almond paste in the middle and cover it with another round dough piece. You must get 38- 42 cookies. Place them on cookie sheet (on cooking sheet) Bake in 375F (190 C) for 10 minutes. Do not bake any longer. Let the cookies cool down on the rack.
