Quinoa Vegetable Burgers W/Home Made Buns
Ingredients:
1 egg 1 can black bean 1 sweet potato 1/2 C quinoa 1 medium grated yellow onion 1 Tbsp. Minced garlic 2 chili peppers diced really small 2 Tbsps. Taco seasoning 2/3 C oat flour 1tsp. black pepper 1tsp. salt Avocado cream: 1 avocado 1/2 C Greek yogurt (or sour cream) 1/4 C chopped fresh cilantro 1/4 C chopped fresh parsley 1 Tbsp. Limejuice 1/2 tsp. hot pepper sauce Making: Cook the quinoa in 1 C of water. (Bring the water to a boil add quinoa simmer for 20 minutes.) Peel the sweet potato and boil until it cooks. (Chop the potato into a few pieces) Add chili pepper, chopped potato, beans, chopped onion, garlic, chopped cilantro and parsley. Transfer potato/bean mixture into a bowl. Add egg, black pepper, salt, taco seasoning, and oat flour mix it well Add boiled quinoa; knead the mixture and shape into 6 burgers. Have the burgers rest in the refrigerator for half hour. Fry the burgers in the nonstick pan. Buns I used “sesame bagel” recipe for the buns. I only used half recipe to make 5 buns. Avocado cream Blend avocado, sour cream, Lime juice and a hot sauce in the food processor.
