Sesame Bagels ( SIMIT)
Ingredients:
1 C warm milk or water (105 F/41C) 1/4 C olive oil 1 pack (1Tbsp.) dry active yeast 1 Egg 4 Tbsp. sugar 1 Tbsp. salt 3 ½ C unbleached Flour 3/4 C molasses 1/4 C water 1 C sesame seed Making Whisk together yeast, egg, olive oil, and sugar, salt. Add warm water. Add 1 C flour whisk together gently . Add another Cup flour, mixture gets thick, sticky and heard to mix with fork Add another Cup of flour and try to put the dough together by hand At this time sprinkle some flour under the dough and try to form soft dough not too sticky and separating from the edge of the bowl. ATTN: ** at the stage you may or may not use all last 1/2 C of Flour. But if you used all then do not add more flour any more. Knead the dough for 3 minutes. Round up the dough and cover the bowl Let is stand at the warm place for about 30. Min. until dough raises one half of the size. Bring the dough on to floured surface get rid of the air gently kneading the dough and bring to an elliptic shape. Divide the dough 16 pieces. Roll each piece with outwards strokes into 15 inches long sticks Take two sticks bring ends together let one stick free and dangling and wrap the other one around the dangling one. You will get single braided stick. Next, bring the both and together make it a circle. This dough is very easy to handle. Gently immerse the bagel (simit) in molasses mix for 3 seconds. Take it out and place in sesame plate, make sure bagel (simit) coated with sesame seeds and place on a cookie sheet covered cookie tray. Repeat the same process to the rest of the pieces and place bagels on the tray 2 inches apart from each other. ** To make a bagel I divide the dough 32 pieces this way I will have 16 counts bagel. If you like traditional Turkish simit then you divide the dough 16 pieces for 8 SIMIT Cover the bagels. Let it sit in the warm place for at least an hour until each bagel becomes double the size. Set the oven 365 F (190 C) When the raising complete, bake them for 25 Minutes Cool on the rack upon taking out of the oven. |
