Lemon custard tart

Ingredients:
For the crust
1 1/2 C grounded graham crackers, OR
(I used homemade almond flour cookies.)
5 Tbsp. unsalted butter.
1 Tbsp. vanilla paste
For the custard:
1 1/2 C whole milk
1/2 C sugar
1/2 C lemon juice1/2 lemon rind
2 1/2 Tbsp. tapioca flour
1/4 C unsalted butter
1 Tbsp. vanilla sugar
 
Making:
Ground the crackers in the blender
Add butter and vanilla paste,
Mix well lay the crust into 8 inches diameter baking dish
Press the custard evenly flat
Bake at 350 F for 10 minutes.
Take out of the oven set aside.
On the other hand, dissolve the starch In 1/2 C of milk
Pour in the sauce pan
Add rest of the milk, mix well
Add sugar, lemon rind, lemon juice
Bring to a boiling point and
Keep stirring until custard thickens.
Take of the heat and add butter, stir until butter melts and well mixed.
Pour the custard in to the crust.
Let the custard cool down and eventually cover the dish with saran wrap and rest in the refrigerator at least 3 hours.
You may garnish with lemon, strawberry or raspberry.
