Cranberry Mousse
Ingredients: 1 cup cooked cranberry relish 1/2 C cranberry juice 1 1/2 C whipping cream 1 pk. (8 oz.) cream cheese 1 tsp. liquid vanilla 2 Tbsp. white sugar Making: In a small bowl, bring together softened cream cheese and sugar and blend it to creamy mixture Add vanilla, cranberry juice and one cup cooked and sweetened cranberry relish mix well and set a side In another small bowl whip, the whipping cream until it becomes a creamy texture. Fold in whipped cream spoon by spoon into the cream cheese and mix gently. Pour in small ramekin bowls, garnish with cooked cranberry and pistachio crumbles. Refrigerate for couple hours.
