Cranberry Relish
Ingridients
2 Lb. fresh cranberries 1 C raw sugar 1/2 Orange juice One orange rind One lemon rind 1/2 -inch fresh ginger grated 1 tsp. cinnamon 1/2 tsp. nutmeg Wash the cranberries and place in a saucepan Add 1/2 C water and start cooking on medium heat. As soon as cranberries stars popping up take off the heat Let it cool down Drain the excessive juice (to be used in cranberry punch) Bring the following ingredients to boiling point in a saucepan (sugar, ginger, orange juice, lemon and orange rind, cinnamon, nutmeg) Add cranberries in caramelized sugar. Keep on the heat for another couple minutes. Take off the heat cool it down, transfer into serving dish. 11/26/2018 Back to Soups and salads |
