Ingredients:
4 Cups Beef broth 2x 3-ounce brown rice ramen noodles 1 Tbsp. tahini 2 Tbsp. rice vinegar 2 Tbsp. Garlic chili sauce 2 Tbsp. soy sauce 1 Tbsp. grated fresh ginger 4Tbsp. olive oil One block firm tofu 1 Lb. mixed Asian mushrooms 1 C chopped yellow onion ½ C chopped green onion to garnish 1 Tbsp sesame seed Making: Prepare all ingredients in advance Cut tofu in 1/2 inches cubes Mix tahini, rice vinegar, garlic chili sauce, and soy sauce in a bowl Dice yellow onion Chop green onion in small pieces Chop the mushrooms Heat the olive oil Fry the tofu until all sides of the cubes gets slightly brown, set aside. Saute onions until translucent add ginger sauté a few minutes more add mushroom, sauté until mushrooms gets softened add tofu a few more minutes. Add tahini mixture, Add beef broth let it simmer In another pan boil water and add noodles cook for 5 minutes. Drain and add the noodles into broth mixture. Let it simmer few minutes all together.
