Molasses_Tahini Pastry
Ingredients:
1 C warm milk or water (105 F/ 41C) 1/4 C olive oil 1 pack (1Tbsp.) dry active yeast 2 Eggs 5 Tbsps. sugar 1/2 Tbsp. salt 4 C unbleached Flour 1 C molasses 1 C Tahini 1 egg yolk Making Whisk together yeast, egg, olive oil, and sugar, salt by adding warm water slowly. Add 1 C flour whisk gently with wooden fork Add another Cup flour, mixture gets thick, sticky and heard to mix with fork Add another Cup of flour and try to put the dough together by hand At this time sprinkle some flour under the dough and try to form soft dough not too sticky and separating from the edge of the bowl. ATTN: ** at this stage you may or may not use all last 1/2 C of Flour. But if you used all then don’t add more flour any more. Mix molasses and tahini together in a bowl. Knead the dough for 3 minutes. Round up and cover the bowl with saran wrap. Let is stand at the warm place for about 30. Min. until dough raises one half of the size. Bring the dough on to floured surface get rid of the air gently kneading the dough and bring to an elliptic shape. Divide the dough 16 even pieces Roll out each piece 14 inches diameter circles Spread 2 Tbsp. molasses/tahini mix on the rolled sheet Divide in two half circle Roll in each circle into a 14-inch long baton and turn the rod into a nest by rolling in inwardly. Dissolve 1/2 Tbsp. molasses in 2 C of water. Dip the pastry in molasses water Place on the cooking sheet. Repeat the same process for each one of 16 pieces of the dough Brush egg yolk on to the each pastry Sprinkle some sesame seed Cover the pastries with another cookie tray Let the pastries rise for 45 minutes.
