Taco Soup
Ingredients:
1 C diced onion 2 Tbsps. olive oil 1 C red beans 1 C kennel corns 1 C salsa 1 cup cooked tomato 2 Tbsp. pepper paste 2 Tbsp. taco seasoning 1 Tbsp. cumin 1 tsp turmeric 2 tsps. salt 5 cups water 2 tbsp starch 1/4 C fine bulgur Making: Sautee diced onion in a pan with 2 Tbsp Olive oil until it comes translucent Bring the heat low setting Add cooked tomato Add salsa **(If u used hot salsa no need any chili pepper, if you used mild salsa add 1 small red chili pepper) **If you use homemade salsa follow the recipe followed) Making Salsa: 3 (big boy) tomatoes 1/2 red onion 1 jalapeno pepper 1 clove garlic 1/2 Cup chopped cilantro 1/2 Tbsps. rice vinegar 2 tsp salt Bring all ingredients together in the blender and blend 30-second pulse. Not more than that. Your salsa is ready. Use 1 cup of this salsa for your soup. Add beans and corns Stir few times Add turmeric, turmeric and salt Add 4 cups water Start simmering Dissolve starch in 1 cup of water and add this into the soup.
