Sweet Potato Almond Meal Muffins
Ingredients:
1 egg 1/2 C raw sugar 1/2 C milk 3/4 C olive oil 1 C almond flour 1 ¼ C wheat free flour 1/4 C pumpkin seed 1/4 C dried cranberry 1/2 C cooked sweet potato (4 inches sweet potato) 1 Tbsp. baking powder 1 Tsp. Cinnamon Making: In a mixing bowl bring sugar and egg together and whip it for 30 second. Mix it together with milk, followed by adding oil. Mix in cubed sweet potato pieces. Mix all dry ingredients together in a bowl (almond flour, gluten free flour, pumpkin seeds, cranberries, baking powder, cinnamon,) Fold in dry ingredients with wed ingredients until incorporated together. Transfer muffin batter into muffin pan Bake in 350 F preheated oven for 20 minutes.
