Super Bowl Chili
Despite all nutritional richness dry bean family is not at the top of our menu for years. But there was a combination of meal that we used to cook on Super Bowl Days some years ago. I wanted to bring back this old tradition on Super bowl day this year.
Ingredients: 1 Lb. Ground round (I grind my own meat with a mixture of beef chuck roast and lamb shoulder) 1 Big yellow onion (diced) 2 Tbsp. Olive oil 3 cloves of garlic (minced) 1 red bell pepper (diced) 1 carrot (diced) 1 big yellow tomato (grind) 1 lb. dry red beans (soaked 24 hrs. and refreshing water every 8 hours) 2 small green chili peppers 8 oz. beef broth 1 tbsp. cumin 1 tbsp. paprika 1 tbsp. chipotle pepper 1/2 tbsp. coriander 1/2 tbsp. coco powder 1/2 tbsp. sugar 1/2 C tomato sauce 1/2 Tbsp. Himalayan salt Making: Soak dry red beans for 24 hours refreshing the water every eight hours. Cook in pressure cook for 20 min. (I cooked in Insta pot with 4 cups of water) Set the cooked beans aside. In a skillet heat the olive oil and add diced onions sauté on medium heat until onions get translucent. Add the ground round and keep sauteing until meat turns to brown. Bring together diced carrots and red bell peppers in a slow cooker Return sauteed meat into a slow cooker Add grated yellow tomato, Tomato sauce, Chipotle pepper sauce Add cumin, coriander, coco powder, salt, sugar, Add grated yellow tomato and red tomato sauce Add beef broth. Adjust the slow cooker for 4 hrs. to allow all vegetables, spices and sauces incorporated. During last ½ hr. add cooked beans. Your chili will be yummy for the good night of super bowl with the touch of sour cream, cilantro. I always serve my chili along with grilled kielbasa (a Polish sausage grilled and sliced thick- with preferred kind of meat) And bulghur salad. 3/2/2022 Back to Meat selections |
