Sunny side up with sautéed spinach
A delicious breakfast can be ready on your plate with in minutes,
For two people, Ingredients: 1 Lb. baby spinach 10-12 ea. Cherry tomatoes 4-5 ea. Green onions 1 sweet green pepper 2 eggs 1 tbsp. olive oil 1 tsp. salt 1 tsp. cayenne pepper if desired. 2 Tbsp. crumbled feta cheese 2 Tbsp. grated white cheddar cheese. Making: All you need to wash and drain all vegetables very well. Chop in to small pieces. Sauté the vegetables in 1 tbsp. olive oil in flat pan. Open egg size space in the vegetables and break the whole egg in the empty space. Close the lid and cook the eggs for couple minutes on medium heat. Add feta and cheddar cheese on the eggs and the vegetables, close the lid back. Wait until cheese melts. Serve immediately. Back to breakfast page |
