"Butter Chicken" from Suneeta
Ingredients
2 Lb. Chicken ( legs and Breast mix -Cut in 1 inch cubes) Marinating Ingredients: 1/3 C Yogurt 1 Tbsp. Ginger Garlic Paste 1 Tbsp. Lemon juice 1 Tsp. Red Chili Powder 2 1/2 Tbsp. Tandoori masala 1 Tsp. Coriander powder 1 Tbsp. Chicken masala 1/2 Tsp. Turmeric 1/2 Tsp. Cumin 1/2 Tsp. chili pepper Gravy Ingredients: 1 C half and half 1/2 C Sour Cream 1/2 C Tomato puree 1 Tbsp. Tomato paste 1/2 Tsp. chili pepper 1 Tbsp. Chicken Masala 1/2 Tsp. sugar Salt 1 Mid size diced dry onion 2-inch cube Butter 1/2 Yellow bell pepper 1/2 Red bell pepper Basmati Rice 1 C Basmati rice Two C Water 4 Tbsps. butter 1/2 Tsp. cinnamon 2 Tsp. Cumin seeds 1 Clove garlic (minced) 1/2 C Cashew nuts Preferences: Tandori Masala or Chicken Masala can be bought as a ready mixture from the Indian store. If you prefer homemade Masala please follow the recipe Tandoori Masala First grind Tandoori mix ingredients (what is in seed form) using mortal and pastel one type at a time; 1 ea. Nutmeg 4 Tbsps. Coriander seeds 7 ea. Red Chili pepper (mini chilly) 1 Tbsp. Cumin seed 1 Tsp. Fenugreek seed 4 ea. Mace 5 ea. Cardamom seeds 2 ea. 3 inches long cinnamon stick 15 ea. Cloves Than add 1 tsp. black pepper 1 Tbsp. ginger powder 1 Tsp. turmeric powder Mix all powder, and sauté on medium heat just for 1-2 minutes. Strain the mix. It is ready to use. Making: Chicken: Prepare the chicken and place in a bowl In another bowl bring following ingredients together, Yogurt (curd), ginger garlic paste, lemon, red chili powder, tandoori masala, coriander powder, chicken masala, salt, turmeric. Mix marinating sauce into chicken and marinate 2 hrs. in the fridge. Cooking Chicken: Set the oven 375 F. Bake the chicken until it cooks and browns a little Gravy: Mix sour cream, heavy whipping cream, tomato paste, garam masala, chicken masala, red chili powder in a blender and blend the sauce. Diced the onions and sauté with butter until they get translucent, add chopped red and orange bell pepper Add tomato mix into onion and let boil for 5 minutes. Add Baked chicken keep on simmering about seven more minutes. Basmati Rice. Bring butter, cinnamon, cumin seeds, minced garlic, cashew nuts, in a pan and sauté for few minutes Add rice sauté few minutes Add water Simmer for 20 minutes.
