​Sun chokes in olive oil

​Jerusalem Artichoke (Sun chokes)
 
Sun chokes are tuberous root vegetables from sunflower family. They are not related artichokes family and are native North American plant.
They help certain minerals being absorbed in to the body.
They have certain type of fibers, which prevents cancer, and have prebiotic features.
Also studies show sun chokes have low glycemic index there fore control blood glucose. Thus they are good to have in diet list of diabetic people.
Sun chokes can be found in the markets fall and winter months.
 
They can be boiled and pureed, cut in slices and roasted or cooked in vegetable oil.
 

Ingredients:
2 Lb Sun chokes
1 C chopped carrots
1 Big onion (chopped in diced size)
1/4 C white rice
1/4 C olive oil
1 lemon
1/2 C parsley (chopped)
1/2 Tbsp Salt
 
Making:
Wash the roots well and peel
Chop in 1-inch cubes
Sautee onion in olive oil until translucent
Add carrots
Keep sautéing
Add sun chokes
Add washed rice 
Sautee few more minutes, add 1/3 C of water
Add salt
Simmer until roots and rice cooked well.
Transfer into a Pyrex dish
Drizzle one lemon juice after it cooled down and decorate with parsley.
