Strawberry Cheesecake
Ingredients:
1 1/2 C Graham Crackers 3 Tbsp. unsalted butter melted Cheese cake filling ingredients: 1 C fine granulated sugar 4.5 package light cream cheese at room temperature 2/3 C sour cream 2 Tbsp. homemade vanilla paste 2 Tbsp lemon juice 1 lemon rind 4 large eggs (separated) Strawberry topping sauce 1 ½ C washed and sliced strawberries 1 C sugar 1 Tbsp. lemon zest 2 Tbsp. water 1 Tbsp corn starch Making: Part 1- Heat the oven 325F In a food processor crumble, all the graham crackers Transfer to the bowl and add melted butter, mix well to incorporate butter and crumbs. It may become like sticky crumbs. Place round cut cookie sheet at the bottom of the 8’’ spring form cheesecake pan. Place the crumbs into the pan, and press firmly into the bottom of the pan slightly raise up to the side of the pan. Set aside. Part2- In large bowl add cream cheese (room temperature) stir with hand mixer until smooth and creamy. Add sugar and keep stirring again until creamy Add sour cream, vanilla extract, lemon juice and lemon rinds, pinch of salt and stir with medium speed until all well incorporated. Stop the mixer and scrap the sides of the bowl once in a while. Separate the room temperature eggs yolks from whites. Add each egg yolk one at a time and stir. In another bowl mix in high speed, all four egg whites until they get solid white soft peaks Fold in egg whites into the cheese cake mix, use low speed mixer. Pour cheesecake batter into the prepared pan on to the crumbs. Tap couple times to get the bubbles out to the surface Place the cheese cake on the center rack of the heated oven (325) for 45 minutes. Reduce the heat of the oven 300 F and continue to bake another 30 minutes. Reduce the heat 200 and bake another 1 hr. Turn the oven OFF keep the cheesecake in the oven another 1/2 hr. Take it out of the oven and completely cool of in room temperature on the rack. Part 3- While cheese cake is baking prepare the topping Bring the strawberries, sugar, lemon in a pot and bring it to foaming (not boil) level on the medium heat. Mix water and corn starch and add into the strawberries. Simmer until slightly thickens. I used this on the cheese cake as a topping , however you can always buy canned cheesecake topping .
