Mango Sticky rice
When we were living in Asia, mango sticky rice was our favorite dessert whenever we travel to Thailand.
It is easy to make as long as you use right rice and apply the rice cooking techniques. And if you have ripe sweet yellow mango this recipe will be among your favorite dessert list. Ingredients: 1 Cup sticky rice (you may use arborio rice but it never comes out as good as sticky rice) 1/2 Cup sugar (I used row sugar) 2/3 Cup coconut milk 1/2 Tsp. salt For topping: 1/2 C Coconut milk 1 Tbsp. rice flour or (1 Tsp. starch) 1/4 tsp. salt 1 ripe mango A steaming pan (Asian steaming basket) Special cheese clothes (to steam the rice) Making: Rinse The rice at least 5-6 seven times until the water gets clear (to get rid of the starch on the rice) Then keep the rice in the bowl fill with water one inch above the rice) Let it rest overnight. Be careful to handle the rice on the next morning because grains will be very fragile. Boil at least 4 C of water on the steamer. Place the cheese clothe as it shown on the picture Add rice in the cheese clothe very gently and fold the edges to close the over the rice. Close the lid. Lover the heat to the medium (water must be quietly boil all the time during the cooking) Steam the rice for 25 min. In the mean time prepare the sauce. Add the coconut milk into a casserole add sugar and the salt bring to boiling point . do not boil much but keep it warm. As soon as steaming time over, Filip the rice into a deep bowl like one big lump Gradually add the sauce buy folding the rice slowly without mashing. Close the lid rest the rice fir 20 minutes, to let the rice absorb the sauce Open the lid, fold the rice few times make small hill looking like lump, you may experience rice is becoming even more sticky and thicker. Close and rest the rice 20 more minutes. Your rice is ready to serve. Making the Topping: Mix 1/2 C of coconut milk with rice flour (or starch) add salt, mix well and bring to a boil. Serving: Carefully transfer sticky rice into two separate serving dishes.
