Spinach Muffins
Ingredients:
6 once baby spinach 1/4 C sour cream (or plain yogurt) 1/2 C Milk 1/2 small onion 2 Tbsp. crumbled feta cheese 2 eggs 1/2 fresh avocado 1/4 C avocado oil 1/2 slice of bread 1 C flour 1/4 C crushed walnut 1 Tbsp. powdered collagen 1/2 tsp red flaked pepper 1/2 tsp. peppercorn 1/4 tsp. turmeric 3 tsps. Baking powder Making Set the oven 375 F Put all wet ingredients and a bread into the food processor (first 9 ingredients) Blend for a few minutes Make it a spinach paste Place all dry ingredients in a large bowl Mix all together by folding with a wooden fork. Transfer the muffin batter into muffin pan (2 scoops into each well) Top with crunched walnuts Decorate with a piece of tomato Bake for 20 minutes.
