Spinach Wrapped Chicken Breast
Ingredients 1/2 Lb. Spinach 1 medium onion 1Tsp. chili pepper mix Salt Freshly grounded black pepper 1/2 C ricotta cheese 1/2 C parmesan cheese 2 Tbsp. mozzarella cheeses 3 (Chicken) breasts 2 eggs 1 C bread crumps 1 Tbsp. Butter 1/4 C olive oil Making: Dice the onions and sauté in a Tbsp. olive oil Add washed spinach chili pepper mix and sauté altogether few more minutes. Add all cheese mix through set aside. Place the breasts on a plastic wrap and cover with another layer of Wash chicken breasts and tap them to flatten and able to wrap. Divide the spinach filling in three pieces Place the filling on the breast and roll with the help of cling wrap. Repeat the process for the other breasts. Refrigerate the stuffed chicken breasts for few hrs. Whip the eggs in a bowl Bread crumps in another bowl Unwrap the stuffed chickens off the cling wrap roll in eggs first, than in breadcrumbs. Melt the butter and add a tbsp. of olive oil heat in the cast iron pan. Panfry the stuffed chickens. Serve warm with rice and fried green pepper. back to poltury |
