Gnocchi Spinach Sautee
Ingredients;
1-C Gnocchi 2 Cups baby spinach 1/2 chopped walnut 1 C chopped tomato 1 clove of garlic 1 Tbsp. Dried Basil 1 Tbsp. dried Thyme 1 Tsp. salt 1/2 Tsp. chili pepper powder 3 Tbsps. Olive oil 1/2 C Grated Parmesan cheese Making: Heat 1Tbsp. Oil in a wok on a high heat sauté spinach slightly, Add walnut; continue sautéing until walnuts slightly browns. Set aside. Heat 2 Tbsp. oil on a medium heat; add diced tomato, basil, thyme, salt, chili pepper and minced garlic. Simmer the sauce until tomato sauce thickens. Boil 2 C water in a small pan, add Gnocchi and cook Gnocchi for 3 or 4 minutes. Transfer cooked Gnocchi in to a serving dish using a strainer. Lay warm spinach sautéed /walnut mix on to Gnocchi and top with tomato sauce, finally sprinkle grated Parmesan cheese. Serve warm. |
