Spinach Filled filo dough Triangles
Ingredients: 1 Package of filo dough 2lbs of Baby Spinach 1/2 Crumbled Feta cheese 1 small onion (chopped dice size) 1 Tbsp. olive oil 2 tsps. Black pepper 2 tsps. Salt 1 tsp. cumin 1 tsp. cayenne pepper 1/2 C milk 1 egg and 1 egg white 1/4 C olive oil Mix well and set a side Making: Rinse the Spinach well Sauté diced onion slightly with olive oil on medium heat. Add baby Spinach Add salt, pepper, cayenne pepper and cumin. Add Cheese Take off the heat and set aside. 1st layer-Spread one sheet of filo dough on the kitchen bench Brush 1 Tbsp. egg/milk mixture evenly on it. 2nd layer- Place another sheet of filo dough on the first one Brush 1 Tbsp. egg/milk mixture evenly on it 3rd layer- Place the 3rd sheet of filo dough on the second one Brush 1 Tbsp. egg/milk mixture on it. Cut through the layered sheets vertically 5 stripes (2 inches each strip) Cut the sheet horizontally 2 pieces. This way you must have 10 strips (2 inches wide- 7 inches long) Place 2 Tbsp. chicken filling on the edge of the strip and fold it (as it shown on the pictures) into triangle shapes. You must have 10 each triangle. Repeat the process above 2 more times, until you use all the filo dough sheets. Add 1 tbsp. milk together with left over egg yolk and brush on all the triangles. You will have 30 triangles total. Bake in 180 C (350 F) Bake the pastries 25-30 minutes until the tops turns to golden brown.
