Spinach chips WITH HUMUS TOPPED FRIED tOFU
Spinach Almond Flour Chips with Tofu Topped Humus
Ingredients for Spinach chips:2 Tbsp 200 gm fresh baby spinach 1 Tsp. Turmeric 1 Tsp. Himalayan salt 1 Tbsp. sesame seeds 2 Tbsp. olive oil 1 Tbsp. cottage cheese (or salt less feta cheese) 1 ½ C almond flour 1/4 C 2 Tbsp. flour Ingredients for Tofu Humus 1 Can chickpeas 4 Tbsp. Lemon juice 1 Tsp. salt 1/2 C water 4 Tbsp. Tahini 1 clove garlic 1 tbsp. olive oil 1/4 C parsley 2 Tbsp. Garlic Chili oil 1 C firm tofu Making Spinach Chips: Bring all first six ingredients in the blender pulse on and off for 10 seconds for a few times until mixture incorporated to each other. Mix flour and almond flour in a bowl Add spinach mix into the flour mix and make dough, if the dough is too sticky add little more flour (gradually a Tbsp. at a time – nor more than 1/4 C flour) Roll the dough between two cooking sheets for about 1/8 cm (like corn chips) this is really thin If you want ticker you may roll into 1/4 mm thick dough. Cut the rolled dough into 1 1/2-inch squares Cook for 20 minutes in 400 F (check on 15th minutes. do not let the edges get ) Let it cool and break the pieces Ready to serve. Making Humus: Wash the chickpeas and peel the skin as much as you can by rubbing them into each other gently under the water. Combine chickpeas, lemon juice, salt, water, tahini, garlic, in the food processor until mixture gets smooth and creamy Transfer into a serving dish. Dice the tofu and sauté in preferably a Tbsp. avocado oil until pieces get pink. Top the sauteed tofu on the humus and drizzle chili pepper oil. Sprinkle some chopped parsley.
