shrimp Basmati rice in the oven
Ingredients
5 Tbsp. butter 1 Tbsp. sweet paprika 1/2 Tbsp. chili pepper 2 C basmati rice 1 Lb mini red and orange sweet peppers 4-5 garlic cloves (if cloves are too small use more) 1/2 C minced fresh parsley 1 lemon juice 10 jumbo shrimp Making: This recipe is a really good companion with grilled steak any kind Slice washed sweet peppers as desired Place on a frying sheet Roast for 25 min at 400F set aside Mince garlic really well manually with a knife! (No garlic mincing utensil must be used) Melt 2 Tbsp. of butter in heated iron skillet Soften and slightly sauté the minced garlic (do not burn!) Add chili pepper and sweet paprika Transfer (scrap the bottom of the skillet) the garlic into a bowl, Add lemon juice and minced parsley Toss peeled and cleaned shrimps into the garlic parsley bowl. Set aside Melt 3 Tbsp. of butter in the UNWASHED SKILLET! (so, rice will soak in the slight garlic and chili pepper taste) Add rinsed basmati rice, sauté for few minutes. add 4 Cups of beef broth (or water) Spread roasted sweet peppers on the rice Simmer for 20 minutes, lid closed Take off the heat Spread the shrimp garlic parsley mix bowl on the rice note: do not add lemon juice from shrimp marine on to rice.
