Semolina Cookies soaked in Lemon Syrup

 Ingredients for Syrup:
3 C granulated Sugar

4 C water

1 lemon

Ingredients for cookies:
7 Tbsp. unsalted butter

2 Eggs (spear one egg yolk for top)

1/2 C granulated sugar  

1/2 C semolina (cream of wheat)      

1/4 C olive oil

1/2 Tbsp. vanilla powder

1 Tbsp. baking powder

2 C unbleached flour

 Making:     
Heat the oven 350 F( 180 C)

Make the syrup first and let it cool down.

Bring together 4 C water and 2.5 C sugar and sliced lemon.

 Once start boiling let is boil for 5 minutes.

Bring eggs, room temperature softened butter, sugar,baking powder,vanilla, mix it well.

Add flour gradually form a firm but softer dough.

Separate walnut size pieces from the dough and form a ball by hand.

And place the cookies on the cookie sheet.

Mix the egg yolk and brush on each cookie.

Place a piece of almond on each cookie.

Bake the cookies 25 minutes (or until they get golden color.)

Pour cooled syrup on the hot cookies gradually and let the cookies absorbs the syrup.

Let the cookies set for 2 hrs. At least before serving
