Scrambled Eggs into Sautéed Vegetables

Original name “ Menemen” refers to a small town on the west coast of Turkey; menemen is one of the multi purpose recipes that you may enjoy the taste of sautéed fresh tomato blended into a scrambled egg.
In certain regions this meal can be prepared starting with sautéed onion.
I do not use onion however, I add few chopped green onion when I sauté the pepper before I add tomatoes.
Here is how I prepare “Scrambled Egg Blended with Tomatoes (Menemen)

Prepare: 10 min.
Cooking: 15 min.
Serves for 2 people

Ingredients:
3 midsize tomatoes (chopped)

3 green peppers (chopped)

3 green onion (chopped)

4 eggs (mixed well)

2 Tbsps. of olive oil

2 tsp. black pepper

1 tsp. sea salt

Preparing:
-Heat the casserole, add onions and peppers start sautéing add salt and pepper.
-Add tomatoes and simmer until tomatoes cook and excessive juice disappears.
-Scramble the eggs in a separate bowl
-Add into the tomatoes.
-Keep the heat low and carefully fold the whole meal until eggs cook.

Useful Hints: Once eggs cooks take the pan off the heat, otherwise meal loses the texture and becomes juicy.

Serve immediately with whole grain roti, pita bread or freshly baked village bread (Barley Bread)
