Roasted Cornish Hen with grilled Polenta

Ingredients:
Polenta
1 Cup polenta (Corn meal)
2 C milk
3 C water
1 tsp salt
 
 One Cornish Hen
Steak seasoning
2 Tbsp olive oil
 
Tomato sauce
2 cloves garlic
2 middle size tomatoes
2 Tbsp olive oil
1tsp salt
 
1/2 C Italian cheese mix (mozzarella, Romano, Parmesan)
 
 Making:
Add Polenta (corn meal) sprinkling on the water/ milk mixture and start cooking by mixing with wooden spoon until polenta released form the side of the pan on medium heat.
Then bring the heat down very low and mix it the polenta every 10 minutes until it thickens and get completely soft and cooked. (for an hr)
Spread the polenta on 9x8 baking Pyrex and spread the cheese on it and grill for 5 minutes, until cheese melts and slightly fried.
 
Rinse the hen tap dry and brush with olive oil.
Spread steak spices and rub all over the meat.
You may roast in the oven 390 F 30 minutes. Or in the air fry 390F for 15 minutes.
In the meantime, fry couple garlic clove in a Tbsp. olive oil, add chopped tomatoes and let it cook the sauce for 15 min on low heat.  Season with fresh grinded peppercorn and salt.
Arrange half of the roasted poultry and a slice of grilled polenta on the dish and garnish with tomato sauce. Serve immediately.
