Red Potato Quiche
Ingredients:
2 medium red potato 4 eggs 2 Tbsp. milk 1 Tbsp. olive 1 C mozzarella cheese (grated) 1/2 C grated Parmesan cheese (grated) 1/2 C feta cheese (crumbled) 1/4 C parsley (minced) 1/4 C green chili pepper (chopped) 5 cherry tomatoes (divided in 2 pieces) 1 tsp. salt 1/2 Tbsp. chia seeds 1/2 Tbsp. Hempseeds (shelled) Making: Wash the potatoes well, peel and slice them about 1cm (0.39 inch) thick. Code the potato slices with olive oil lightly. Lay them out on a cooking sheet in a cookie tray. Bake them under (broil) until slices get slightly brown. Cool them down. Code the bottom of the pan with olive oil slightly Arrange baked potato slices in circular way in a pie dish. Whip four eggs in a bowl add milk and mix it again. Incorporate three type of cheese into egg mixture mix once. Add chia seeds, hempseeds, salt and parsley Mix all one more time and pour on to the potato slices. Garnish with chili pepper and tomatoes. Bake in 180C (350F) for 15 minutes.
