Red Cabbage Salad

Ingredients
1/2 C Quinoa
1/2 Head red cabbage (Cut shredded)
2 Tbsp olive oil
1/2 tsp. Himalayan salt
4 cloves garlic
1/2 C yogurt (or sour cream)
1/4 C chopped (or crushed) hazelnut
1 Tbsp. sesame seed
1 Tbsp better
1Tbsp. Chili pepper flakes(optional)
 
Making:
Boil 1 1/2 C water, add rinsed quinoa cook until grains are cooked (about 30 minutes) .Drain excessive water
Heat the oil and Saute shredded red cabbage until it gets soft
Add cooked quinoa into the cabbage. Transfer into a large bowl set aside.
Bake the whole head of garlic but use only 4 cloves of it
Smash 4 cloves of garlic / mix the garlic into 1/2 C of plain yogurt
Transfer sauteed cabbage and quinoa mix into a serving dish, spread garlic yogurt on it mix very gently
Heat the butter in another shallow pan, add crunched hazelnut, sesame seeds and chili pepper flakes
Sauté very slightly (do not burn butter nor hazelnut nor sesame seed)
Spread the hazelnut topping on to yogurt/ cabbage mix
This is basically a salad but could be very well consumed as a side dish.
Serve Luke warm.
