Quince Compote
With the first look quince tough, yellowish green almost a pear shape and not inviting fruit. It is from pear family and has sweet and sour tangy taste. It has a unique aroma. It is know to reduce acid reflux symptoms. I save the seeds and put in the cheesecloth (made a small socket). Cook it together with the fruits. It turns the fruit color to beautiful sharp red color. Ingredients : 2 ripe Quinces 2/3 C Raw sugar (it is leftover after sugar cane processed to remove the molasses. This is why it tastes like brown sugar. It doesn’t have more nutritional value but somewhat healthier because it has molasses particles in it and it is less refined) 1 Lemon juice 1 C water Making: Wash the fruits very well (I did not peel the skin - neither put the seed into the sac) Cut in 1/2-inch slices, place in a circular row in the pan. Drizzle lemon juice on the fruit. Spread the sugar evenly on the fruit. Spread the seed on the fruit Close the lid and rest in RT for about an 1/2 hr. Put on medium heat and let it simmer 1/2 hr. Simmering helps the sugar melt more and let the fruit release its juice. Add 1 C water keep simmering until most of the water is evaporated and juice caramelized.
