Ingredients: 5 mid-size potato 1 egg yolk 2/3 C mozzarella cheese(grated) 1/3 C mildly cheddar (grated) 1/3 C minced fresh parsley 2 fresh onion chopped small 1/2 C minced fresh thyme 1/2 Tsp. chili pepper 1 Tsp. black pepper Coating to fry: 1 C bread crumbs 2 eggs 1/2 C avocado oil to pen fry Making: Wash the potatoes very well and cook in boiled water until they are soft. Peel the potatoes and mash them in a big bowl. Add, eggs, parsley, thyme, fresh onion, chili pepper, salt, black pepper, mozzarella and cheddar cheese. Make potato dough. Take walnut size pieces and shape like a small petite Coat each petite in whipped egg first followed by bread crumbs. Put avocado oil in the frying pan just to cover the surface (like 1 Tbsp. at a time) Pan fry the potato petites both side to the pink color. Serve immediately.
