Pasta in Tomato–Shrimp Sauce
It has been a long time that I haven’t cook pasta. Today I was reorganizing my food cabinet and I came cross two half used box of tube pasta. Than I started organizing my freezer, I saw a small box of frozen shrimp. While I was closing the refrigerator I saw some left over white wine at the door. At that point I remembered that I had little box of heavy cream that I bought a few days ago. I put all those together and added tomato and some herbs, maybe few calamite olives, garlic, Parmesan. Here comes Pasta with shrimp. My final product was so delicious. Please remember, my main purpose was “to clean” my kitchen cabinets and refrigerator. So sometime you can be creative and just use what you have at home to make a very tasty meal. Also when you see the new recipe do not run to the grocery store before checking your refrigerator. Lets try, Cooking time: 45 minutes. Recipe calls for 4 people Ingredients: 3/4 box of tube pasta 2 Tbsp. Olive oil 3 cloves of garlic (chopped) 2 fresh green onion (chopped) 1 tsp. black mustard seed 1 tsp. salt 2 dried red chili pepper 2 small midsize tomatoes (1 ¼ cup when chopped in cubes) 1/2 Tbsp. fresh thyme (minced) (I used dried thyme) 1/2 Tbsp. fresh basil (minced) (you can use dried basil) 3/4 cup heavy cream 1/2 Tbsp. fresh thyme (minced) (I used dried thyme) 1/2 Tbsp. fresh basil (minced) you can use dried basil ¼ cup white wine 3/4 cup heavy cream 1/2 cup small shrimp 10 calamite olives (halved) 1/2 cup parsley 1/2 cup cilantro 1/4 cup Parmesan cheese Making: Bring a large pot of water to a boil. Add ½ Tbsp. Olive oil. Add pasta and cook it until pasta gets soft but still firm. Pour pasta into a colander drain and wash with cold water. Set aside until you prepare the shrimp sauce. In a skillet, heat the olive oil on medium heat; add garlic, fresh onion, chili pepper and mustard seeds. Cook for few minutes stirring couple times. Add tomatoes, thyme and basil let tomato cook Add wine and keep cooking to blend the aromas for couple of minutes. Add heavy cream for another 2 minutes. Lower the heat, add shrimps, continue cooking five more minutes. Add drained pasta and mix into a sauce Toss in parsley, cilantro and Parmesan cheese. Sprinkle pasta some cheddar before you serve.
