Pan Fried Zucchini Petites
Ingredients:
3 zucchinis (grated) 1 bunch fresh dill ( 3/4 C chopped small) 1 bunch fresh parsley (3/4 C chopped small) 4 each. Green onion (3/4 C chopped small) 2 eggs 1 Tbsp. olive oil 1/4 Tbsp. baking powder 1 Tbsp. black pepper 1 Tbsp. salt 1 C unbleached flour Making: Mix all the ingredients in a mixing bowl except flour Mix well Heat a flat bottom nonstick frying pan Spray olive oil in very thin layer Add the flour into a vegetable mix and stir quickly Take spoonful of the mixture and lay in the pan Repeat the process until pan filled This is a pan fry so we use as less as oil we can use. Fry the zucchini petites until both side browns Transfer into a serving dish.
