Pan Fried Salmon Wrapped in Parchment Paper
"The easiest -messy less- and healthiest fish meal!"
Ingredients: Two servings recipe; 2 ea. Cleaned ready cook salmon fillets 2 pieces 8 x 9 inches parchment paper 1 Tbsp. olive oil 2 Tbsp. grated frozen lemon 1 Tbsp. Thyme (fresh would be better) 1 Tbsp. Rosemary 2 Tbsp. grated ginger root 2 Tsp. Grated frozen turmeric root 1 Tbsp. hot red pepper flakes 1 tsp. chili pepper 1 Tbsp. salt (Use half of the seasoning for each fillet.) 1 mid size red onion 6 small potatoes 2 ea. Habanera pepper 1/2 C mozzarella cheese Lemon wedges and cilantro to decorate Making: Mix all prepared seasonings in a bowl Wash and pat dry the salmon pieces On one half of parchment paper piece, spray on a size of fish piece area 1/4 of the oil and sprinkle/ spread 1/4 of the seasonings Place the salmon piece right on the seasoning and spread the 1/4 of the oil on the fish and sprinkle 1/4 of the seasoning Fold the other half of the paper fold the sides really tight. Pan fry on medium heat 4-5 minutes one side, flip it over and 4-5 minutes In the mean time Slice the onion and spread on a cookie sheet, slice potatoes and pepper spread all together on the same cookie sheet. Spray olive oil and bake in 380 F for 25 Minutes. Put a 1/2 Tbsp. grated mozzarella cheese on baked- fried potatoes put back in the oven till the cheese melts.
