SPINACH Palak PAneer

​Making Spinach Palak Paneer is very easy. The hardest part is making Paneer garam masala.
Paneer recipe I have already posted in Asian recipes category. You also can buy paneer ready from the Indian stores as well as masala.
In case you want to make your own mix of masala here it is.
1Tbsp. Cumin seeds. (Jeerea)
4 dried red chilies
1Tsp. Turmeric powder (Haldi)
1Tbsp. Coriander powder (Dhania)
1/2 Tbsp. Ginger powder (Sukku)
1/2 Tbsp. Black pepper
4 ea. Clove (Laung)
1/2 Yellow mustard seeds (Pili Rai)
6 ea. Green Cardamom (Hari elachi)
1 Tsp. Fennel seeds (Saunf)
2-inch cinnamon sticks (Dalchini)
1 ea. Star Anise (Chakri Phool)
1/2 Tsp. Nutmeg (Jaiphal)
2 small pieces of Mace (Javitri)
Half Tbsp. Rock salt
Bring all spices together in a roasting Pan ( except powdered ones)
Roast them on medium heat until the first aroma comes out, No longer ( it takes only 2 minutes)
Once they cool down grind them in the spice grinder to the powder form.
Add powdered spices
Sift through fine strainer so no more big particles in the masala. 
After completely cooled store the masala in air tight jar. 
 
Ingredients for Palak Paneer;
2 Lb. Organic baby Spinach
2 Tbsp. Olive oil
2 small green chili peppers
1 Tsp. Cumin seeds
1 clove Garlic (minced)
1 Tbsp. King Masala
1 Tbsp. Coriander powder
1Tsp. Sugar
1/2 Tsp. Salt
1/4 C water
1 Lb. Paneer (Cut in 1/2-inch cubes mostly and spare some to grate for 1 Tbsp.)
 
Making Spinach Palak Paneer
 If you buy spinach in bunch wash them very well and cut all stems.
If you buy packed leaf only spinach still rinse it well.
Spear few spinach leaves and process rest of the in-food processor with ½ Tbsp oil. Set aside
In a roasting pan sauté cumin seeds until they pop,
 Add garlic, chili pepper (cut in small pieces), salt and sugar sauté couple more minutes.
Add spinach mix well, add water. Close the lid cook the spinach for 5 minutes on medium heat.
Add masala and coriander, mix all well.
Add cubed paneers, cook just another minutes.
Top with grated paneer.
Serve immediately.
