Organic Carrot Bites w/sour cream dip
Ingredients:
Carrot bites: 14 ea. (Small size) Multi color carrots (peeled and chopped in food processor) 1 midsize onion (grated) 2 Tbsp. Olive oil 2 eggs 1 C minced parsley 4 Tbsp. chickpea flour 1/2 Tbsp. coriander powder 1/2 Tbsp. cumin powder 1/2 Tbsp. chili powder 1/2 tsp. gram masala 1/2 tsp. salt Sauce: 3/4 C sour cream 1 Tbsp. dried dill 1 tsp. pepper flakes 1/4 C cilantro Making: Heat the oil in the wok sauté diced onion until it is translucent Add finely chopped carrot and sauté until it gets softer Add spices and sauté little more Take carrot mix off the heat and set aside to cool off. Add eggs, parsley and chickpea flour Obtain a soft batter. Spray olive oil on a flat frying pan on a medium heat Drop a spoon of carrot batter in the pan side by side Fry each side for 3-4 minutes. Place carrot bites on a serving dish - Bring together sour cream, cilantro, dill and pepper flakes in a food processor and mix well.
