Spicy Okra Tapas ( Bamya salatasi)
Mediterranean’s like Okra. Though I always consumed it in hot meat dishes. Recently we like to consume it without meat in fact like an appetizer. First I tried to pan fry with a Parmesan cheese. It was really yummy.
The other day I tried like a salad but it turned out to a really delicious tapas. Try it, you will enjoy! By the way it is really rich in fiber, Vitamins, A, B1, B6, B12, C and folic acid. Ingredients 1/2 Lb. Fresh okra (preferably small in size) 3-4 green chili pepper. (Chopped in very small pieces.) 2-3 garlic cloves (minced) 1/4 C walnut (chopped) 1/4 C parsley (minced) 1/4 C olive oil 1/4 C Lemon juice (or apple cider vinegar) 1/2 tsp. powdered mustard seed 1/2 tsp. red pepper flakes 1/4 Tsp. coriander powder 1/2 tsp. salt 1 small tomato (chopped in small pieces) Making: Wash the okras well and peel the hats off. Cook the okras in boiled water (You may put a tsp. of baking soda in the boiling water to keep the okras color green) this take only 10 minutes. Rinse the okras in cold water and transfer into serving dish. Prepare the sauce mixing (olive oil, lemon juice, minced garlic, powdered mustard, powdered coriander, salt, chopped chili pepper, red pepper flakes) Mix parsley with chopped walnuts. Pour the sauce on okras evenly and mix gently. Garnish with parsley walnut and top with diced tomato.
