Okra Masala
The good food; potassium source okra also one of the vegetables which is very rich in protein, A, Thiamin, B6, C, folic acid, riboflavin, calcium and more.
No, I will not count limitless health benefits of Okra, Bamia, Ladyfinger, and Gumbo! Yeah! All names refer to same vegetable. I happened to cook it Indian way this time. Here is the recipe. Ingredients: 1 Lb. Okras (tops peeled of carefully and chopped ½ inch long pieces) 3 Midsize tomatoes (Peeled and chopped in cubes) 1 midsize potato (Two of them chopped in cubes, one is graded) 1 part chicken breast (½ Lb.) (Chopped in cubes) 1/2 midsize onion (chopped in cubes) 2 Tbsps. olive oil 1/2 Tbsp. Cumin seeds 1/2 Tbsp. black mustard seeds 1/2 Tbsp. Dried chili pepper 1 Tbsp (1 inch) Ginger 1 clove of garlic grated 1 tsp. masala mix 1 Tbsp. Turmeric 1 Tbsp. Cumin powder 2 Tbsp. Tomato paste 1 tsp. Cayenne pepper 1/2 C Cream (whip cream) Salt Making: Wash all vegetables. Peel potato and chop in cubes Prepare okras (wash, peel top par and divide in 1/2 inch. pieces) Chop two tomatoes grate one of them Heat the oil in a heavy pan Add cumin seeds, black mustard seeds, chili pepper, minced garlic and minced ginger Sauté until cumin seed pops (do not burn) Add onion sauté 2 more minutes Add chopped tomatoes Add potatoes Sautee 5 more minutes Stir okra in, followed by masala , turmeric, tomato paste, powder cumin, salt and cayenne pepper. Add grated tomato, 1/2 C water. Simmer the meal for 20 minutes. Mix in cream and keep simmering 10 more minutes. Serve right away, with, yogurt, roti or just slice of bread.
