Oatmeal Coconut Flour Banana Pancakes

Ingredients:
 1 C oatmeal
1/2 C coconut flour
1/4 C rice flour
1 C milk
2 Tbsp. Honey
2 eggs
1 tsp. cinnamon
1 tsp. vanilla
1/2 tsp. baking powder
1/3 C coconut oil and 1 Tbsp. for frying
1 banana
1/2 C crumbled Greek feta cheese
Use your choice of maple syrup or honey to moisten the pancake I personally eat just like that.
 
 
Making:
Blend the oatmeal in blender as it becomes a flour  
First combine all dry ingredients in a mixing bowl
Add milk (room temperature) mix into dry ingredients
Fold in eggs and mix really gently let the crumbles be visible
Add honey, vanilla, baking powder mix again very gently one time
And let the batter sit for 10-15 minutes for the crumbles absorb the moisture and the batter becomes smooth.
Heat the just a touch of an oil on the flat nonstick frying pan.
Put a spoonful of batter in the pan and place 3 slice of banana
On moderate heat fry one side of the pancake for like 2 minutes until you can remove the pancake with spatula.
Flip it over for another 3 minutes.
Pour over honey/ or maple syrup on each pancake sprinkle crumbled feta cheese.
And enjoy with choice of fruit, papaya, mango or berries.
