Mung Beans Casserole

Ingredients:
1 C mung beans
1 medium onion
1 carrot chopped in small cubes
Green chili pepper
1/2 C frozen corn kennels
6 pieces sun dried tomatoes
1 Tbsp. tomato paste
2 Tbsp. olive oil
1 Clove of garlic
2 Tbsp. garam masala
1 Tbsp. turmeric
1 Tbsp. red chili pepper
1 tsp. grounded peppercorn
1 medium onion
1 tsp. cumin powder
1 tsp. Grind-ed ginger
1 C coconut milk (you may use ½ C whipping cream and ½ C coconut milk, actually gives a better texture.)
Making:
I cooked mung beans in advance. In 4 Cups of water, until they are half cooked.
(You may cook your beans with other ingredients all together)
Saute diced onion with diced carrot together until onions get translucent,
Add chopped sun dried tomatoes.
Add green chili pepper, add corn kennels
Grade ginger in the combination
Add all spices (garam masala, turmeric, sweet red pepper flakes, grind-ed peppercorn and salt)
Fold in cooked mung beans
Simmer after this point
Add coconut milk/whipped cream and 1/2 C water.
Simmer for 15 minutes.
This meal could be consumed as a main dish aside with roti or lavash, or could be a side dish for sea food.
