Ingredients:
250 gm room temperature salted butter 1/3 C yogurt 2 Tbsp. Avocado oil 1 Tbsp Mahlep 1 tsp. salt 2 eggs (separate one egg yolk for the batter, whites for the top , 2nd egg yolk for the Nigel seed top)) 1 tsp. sugar Sesame and Nigella seed Making: What is Mahlep: Mahlep is aromatic spice from the seeds of the certain species of cherry called “Prunus mahalep”. It is extracted from the cracked seed kernel. It is soft and chewy on the extraction, then kernel is ground to powder form before use. Wikipedia In a large bowl bring butter, yogurt, avocado oil, one egg yolk, salt, sugar and mahlep together mix well. Add 1 and 1/2 C flour at first and make a dough, If dough is too soft to handle add another 1/2 C of flour keep kneading. It depends and the brand of flour whether it must be added mor flour or not. But if your dough is still too soft to handle you may add a Tbsp. or two more flour. Until you can handle the dough not sticking in gg white your hands. Take a walnut size of the dough in your hand roll like 4-5 inches sticks and bring two ends together and make a circle until you finish the dough. First half of the circles, apply the following: Mix egg whites in a small bowl, dunk the circle into the egg white and roll in the sesame seed. Place on the cookie sheet. Brush the egg yolks on the rest of the circles and sprinkle nigella seeds on them. Bake sesame circles (called simit in Turkiye) in 360F oven until circles gets pinkish color for about 25 minutes.
