Lemon Bars
Ingredients:
12 Tbsp. Unsalted Butter 2 C unbleached flour 1/4 C powder sugar 1/4 Tsp. salt 2Rbps. water 1 C sugar 4 eggs 2 Tbsp. Arrow root (corn starch) 1 lemon rind 1 Lemon juice (fresh) 1/2 Tsp. Baking powder Making: Coat the bottom of 9X13 Inch Pyrex with thin layer of Butter In a bowl mix flour and sugar 1/8 tsp of salt together Add (softened in room temperature and sliced) butter and make a crumbled dough. Add water and make a wet crumbly dough, Transfer into a Pyrex and evenly flatten at the bottom of the dish Bake 20 minutes in 350F (180 C) ( make sure it doesn’t get too brown. In the meantime, beat the eggs with sugar in a bowl, add starch and baking powder mix all well. Add lemon rind and lemon juice. Mix well set aside. Cool the crust for 5 minutes. Pour the lemon mix on the crust. Bake at 350F(180C) for 25-30 minutes. (Cover top with foil after first 10 minutes.) Let the baking dish cool down on the rack Sprinkle sugar powder on top.
