Leeks and Celery root in olive oil
Ingredients: 3 ea. Young leeks 1 head of Celery root 4 medium size carrot 1/2 C olive oil 1 big onion 2 1/2 ea. Lemons 2 Tbsp. rice Parsley for garnishing Salt and pepper Making: Wash the leeks very well by separating layers slightly and cut 1-inch length set aside Wash the celery root very well from all the dirt, peel and cut in 1-inch cubes Get the juice out of one lemon and in a bowl and put celery cubes in it. Add cold water until right above the celery cubes. Sprinkle some salt and let it sit until ready to stir them in to the meal. Peel the carrots chop them in small cubes set it aside Slice the onions rather thin forms Sauté onions until translucent Add carrots sauté for couple of minutes Add celery keep sautéing, at this stage add 1/2 lemon juice Add leeks, stir once 2 Tbsps. Rice Add 1 C vegetable broth (or plain water) Simmer for 30 minutes. Sprinkle some chopped parsley and another 1 lemon juice after meal get cools off. **this is a cold dish whether used next to the other dishes or alone. 10/6/2020 Back to vegetable picks page |
