KaleBeanBeef in A Pot

Ingredients:
2 C Chopped Kale
2 midsize potatoes
18 once cooked red beans
1 Cup chopped mushroom
1 mid size onion
1/4 C olive oil
 
Making:
 
2 C Chopped kale is about 2 bunches kale
Kale leaves needed to be kept in salt water to release the sand, soil etc. and rinsed few times very well and chopped in small pieces.
Sautee diced onion in olive oil until translucent
Add kale, salt and pepper and first simmer it until kale cooks well.
Boil the potatoes half way and chop them in 1/2-inch cubes.
Add well-cooked red beans into kale
Add potatoes,
Add washed and chopped mushrooms
Mix all vegetable gently, close the lid
Simmer 15 more minutes.
Serve with home made flat bread.
 
Preferences: I added 1 tsp. red chili pepper and 1 tsp. king masala to enhance the taste. Both are containing hot spices***
