Kale Hominy in garlic/lemon sauce

Ingredients:
2 bunches of kale
One half-lemon juice
2 ea. Garlic clove
1 tsp. freshly grated black pepper
1 tsp. salt
1 Tbsp. olive oil
I C of hominy**
1 Tsp. paprika
** Hominy made by certain kind has soaked in alkaline solution. The process actually increases the nutritional value of the grain.
 
Making:
Another very easy vegetable meal has lots of nutritious values.
I prefer not using sautéed onion in this dish not mask garlic / lemon flavor.
 Wash kales very well and chop in inch long pieces. And place on a sautéing pan.
Whisk together in a bowl lemon juice, minced garlic, black pepper, salt, oil, and paprika.
Place the kale on the medium heat
Drizzle all the garlic lemon sauce all over the kale.
Put the lid on.
Simmer the kale until it is almost cooked (about 25 minutes.) by mixing gently every 5 minutes.
Add hominy and keep cooking 5 more minutes,
Serve immediately sprinkling paprika.
Great side dish!
