KAle Salad Bites
Kale is a kind of hardy, dark green curly leaves which belongs to cabbage family, sometimes comes in purple color, grows on stems and doesn’t have any compact head. It has good health benefits being rich in antioxidants, calcium, Vitamin C, iron and fiber. Ingredients: 1 head of broccoli 1/4 head of small red cabbage 1 Bunch kale 3 eggs, ¼ C flour ½ tsp. olive oil ¼ tsp cayenne pepper ½ tsp paprika ½ tsp Himalayan salt ½ Tbsp. grind peppercorn ½ C olive oil to pan fry Ranch dressing, yogurt or sour cream to garnish Making: Rinse the leaves well and chop in very small pieces set aside Also chop red cabbage very small pieces You may both work in food processor. Separate the broccoli florets and steam for few minutes to soften also chop in small pieces Mix all three vegetables in a large bowl. Break in 3 eggs, mix well Add flour and mix it well Add salt grind peppercorn, paprika and cayenne pepper Mix well, you will get some kind of batter made out of the vegetable. Heat the olive oil on the medium heat in a shallow frying pan Scoop the kale mix and place in a pan, Fry until both side gets pink and inside cooked. Repeat this until you finish all batter.
