Homemade hazelnut cream filled chocolate cookies
Ingredients:
Cookies: 200 gm chocolate chips 100 gm unsalted butter 125 gm fine granulated sugar 1/2 C milk 1 egg 100 gm organic cacao 350 gm flour Hazelnut Cream 200 gm hazelnut 100 gm chocolate chips 1 Pack vanilla (I used 2tbsp homemade vanilla paste) 1/3 C of milk 2 Tbsp. cacao Making: Melt the chocolate chips in warm bath style (benmari) In another bowl add melted butter, sugar and mix until it gets creamy. Add milk and egg and keep mixing Add flour and cacao And first start mixing all with spoon, then it may become ticker dough and transfer it on the board. Knead for a short time and roll (using rolling pin) into a 1/8-inch (little tinner than ½ cm) sheet. cut in circles (using a round 2.5-inch cookie cutter or with the edge of the 2.5-inch glass . Place all the cookies on the baking sheet and bake not longer than 15 minutes. Cookies maybe very soft right out of the oven Carefully transfer onto the rack , let it cool down Spread a Tbsp. Hazelnut cream on one cookie and place another cookie on it making like sandwich. Making Hazelnut Cream Place the hazelnuts and cacao in the food processor Make it very small crumbles More you give pulse more hazelnuts oil release Add ¾ Cup confectioner sugar Give another couple more pulse. If hazelnut cream is too thick add little milk as desired until mixture becomes smooth. Use cold milk . Back to Baking Kitchen 12/2/ 2023 |
