Green Bean Frittata
Ingredients: 1 Lb. Green beans (cleaned and cut in 1 inch pieces) 1/4 C olive oil 2 small potatoes (chopped cubically) 1 onion (sliced thinly) 2 eggs 2 Tbsps. Corn meal 2 Tbsps. Milk 1/2 C cooked tomato 1/2 C mozzarella cheese 1tsp turmeric 1tsp cayenne pepper 1tsp salt Chicken Breast 4 pieces of chicken breast 2 tbsp. mountain thyme 2 tbsp. basil 2 Tbsps. Olive oil. Lemon wedges and sliced arugula for green touch. Making: Seam Cook the Beans Heat the oil in non-sticking pan Sautee potatoes and onions until they get golden brown Add steamed beans Add turmeric, cayenne pepper and salt. Set aside In a bowl whip the eggs lightly, Add corn meal and milk mix it well. Pour evenly on sautéed vegetables. Close the lid and cook on low heat until egg mix set hard. Heat 1/2 Cup tomato sauce Add mozzarella cheese mix it well and heat more until cheese melts Garnish the frittata with this cheesy tomato sauce. Serve immediately.
