Green Bean Casserole
Ingredients:
1 1/2 Lb. green beans 1/2 small onion chopped in tiny cubes 2 Tbsp. butter 1 Tbsp. olive oil 1 Lb. white button mushroom (washed and chopped in small pieces) 1 tsp. fresh thyme leaves 2 cloves garlic minced 1 tsp. chipotle pepper 1 tsp. nutmeg 1 C water 2 Tbsps. flour 1/3 C plain yogurt 1/2 C milk 1/2 C Parmesan cheese Freshly grounded black peppercorn 1 C fried shallots Making: Heat the olive oil and sauté the onions very lightly Add the mushrooms and sauté on high heat very quickly Sprinkle a little flour as the mushrooms release the its juice Add thyme, garlic, chipotle pepper, nutmeg, and black pepper Add the rest of the flour mix well and gently Add the water lower the heat Once the mixture thickens add the yogurt and the milk Add Parmesan cheese mix well and set a side Pinch the both end of the beans wash well and divide in three pieces Boil a pot of water and toss the beans into the boiling water and cook until the beans soften. Drain the beans and transfer into a Pyrex baking pan Mix the mushroom gravy into the boiled beans Bake in 350 F oven for 20 minutes. Top the casserole with fried shallots. Broil for 4 minutes.
